Introduction to HACCP
Hazard Analysis and Critical Control Point is an internationally recognized system that is used to help ensure the manufacture of safe food products. HACCP is not a zero risk system, but rather a system designed to minimize the risk of food-safety hazards. HACCP provides a more specific and systematic approach to ensuring food safety, and compliments traditional inspection and quality control procedures.
HACCP is a preventative system designed to detect potential hazards before they occur, and to implement control measures to reduce or eliminate the likelihood of their occurrence. HACCP is a science-based, systematic tool that focuses on preventing problems before they occur, rather than trying to detect failures through end-product testing. It is designed to evaluate and monitor processes to ensure that biological, chemical and physical hazards are reduced, prevented or eliminated.
